Bittern Estate is a family-owned winery on the Mornington Peninsula, where winemaking is driven by a deep understanding of the region’s microclimate and a commitment to producing balanced, expressive wines. The vineyard was established in 1995 on land that has been in the Zerbe family since 1959, benefiting from the area's maritime influence, long summers, and protection from harsh frosts.
With a diverse selection of grape varieties, Bittern Estate produces wines that showcase both varietal character and regional identity. The range includes cool-climate Chardonnay and Pinot Noir, as well as lesser-known varieties such as Tempranillo, Arneis, and Dolcetto. Each wine reflects careful vineyard management and winemaking techniques tailored to bring out the best in every batch.
Bittern Estate’s cellar door offers a warm and personal tasting experience, where visitors are guided through a selection of single-vineyard wines by members of the Zerbe family. Guests can sample wines that highlight the vineyard’s unique site and growing conditions, from the elegant and complex Chardonnay to the rich and structured Pinot Noir.
With views over the vineyard, the tasting room provides an inviting space to explore the estate’s wine portfolio. The relaxed setting allows guests to discover the stories behind the wines while enjoying the natural beauty of the Mornington Peninsula.

Bookings are recommended for all tasting experiences, particularly for groups. Visitors can choose from a one-on-one tasting or a guided group session, with availability from Friday to Monday. Outside of standard trading hours, tastings may be arranged by appointment.
