St Maur Southern Highlands Estate, established in 1998 by Nerio Panizzutti and his son Marco, is a boutique winery located in the Southern Highlands. Spanning 16 acres of volcanic soil, the estate focuses on small-batch production of Pinot Noir, Cabernet, Merlot, and Chardonnay. With roots in Italian winemaking heritage, the Panizzutti family emphasises quality and sustainable practices in their approach to viticulture. The estate, formerly a dairy farm, now produces wines that reflect the region’s cool-climate characteristics, and these wines are featured in a number of Sydney restaurants.
Situated at 700 meters above sea level, St Maur benefits from an ideal climate for growing grapes. Practices such as heavy pruning enhance the flavor and intensity of the fruit, contributing to the distinctiveness of their wines. The estate’s transformation from a dairy farm to a vineyard highlights its blend of historical charm and modern winemaking techniques.
The Cellar Door at St Maur offers a relaxed wine tasting experience, located in a converted vintage dairy farm. Visitors can sample wines from the estate's premium LOT 41 collection and Saint Series, which highlight the winery's commitment to producing high-quality wines. recognised by Gourmet Traveller WINE as the Best Tasting Experience in the Southern Highlands for 2022, the Cellar Door provides a setting that combines rustic charm with attentive service. The estate dog, Siena, adds a welcoming element to the visit, creating a comfortable and friendly atmosphere.
