Paynes Rise Wines is a boutique winery in Yarra Valley, specialising in small-batch wines crafted from carefully selected fruit grown on their Seville vineyard. Established by Tim and Narelle Cullen, the vineyard has evolved over two decades to produce expressive cool-climate wines that reflect the unique characteristics of their site.
The vineyard’s plantings include Cabernet Sauvignon, Shiraz, Pinot Noir, Chardonnay, and Sauvignon Blanc. Winemaking at Paynes Rise follows a minimal-intervention approach, allowing the natural balance of fruit, acidity, and structure to shine. The result is a portfolio of wines that capture the distinct qualities of the Upper Yarra Valley terroir.
Housed within the original 1860s homestead of Seville’s first settler, the cellar door at Paynes Rise offers a unique blend of history and hospitality. Visitors are invited to explore the heritage buildings before settling in to sample the wines in a relaxed setting. Outdoor seating under ancient elm and oak trees provides picturesque views of the surrounding vineyards.
In addition to wine tastings, guests can enjoy a seasonal à la carte lunch menu, local beer and cider, and specialty coffee. The space is designed to offer an inviting atmosphere, where the old-world charm of the historic property meets a contemporary, welcoming experience.

Bookings are recommended for all tastings and dining experiences, with group bookings essential for larger parties. A shared group lunch menu is available for bigger gatherings, and private functions can be arranged upon request. Cancellations for groups of 15 or more require at least one week’s notice to avoid a fee. Due to the presence of animals on the property, pets are not permitted.
