Hunter Wine Lab, founded in 2020 by Nathan Heuston and Leonie Di Lorenzo, brings a fresh perspective to winemaking in the Hunter Valley. Combining traditional techniques with contemporary innovations, the winery focuses on both classic and modern varietals. Their approach emphasises minimal intervention while utilising research and development to enhance the natural character of the wine. Hunter Wine Lab’s portfolio includes traditional wines like Chardonnay, Pinot Noir, Shiraz, and Cabernet Sauvignon, as well as newer varietals such as Prosecco Rosé, Vermentino, and Sangiovese.
The Cellar Door at Hunter Wine Lab offers visitors a unique opportunity to explore small batch, single vineyard wines alongside beer on tap. Guests can choose to relax in the scenic outdoor area, experience the ambiance of the barrel room, or take a tour of the working winery. A highlight of the visit is the chocolate tasting experience, which pairs six handmade chocolates with selected wines, creating a delightful sensory exploration.
