Hunter Wine Lab, launched in 2020 by Nathan Heuston and Leonie Di Lorenzo, represents a modern take on winemaking in the Hunter Valley. Blending traditional winemaking techniques with contemporary approaches, focusing on both old and new world varietals. Their philosophy emphasises minimal intervention while enhancing the wine's character through new world research and development. Hunter Wine Lab produces a range of wines including traditional varietals like Chardonnay, Pinot Noir, Shiraz, and Cabernet Sauvignon, alongside newer, fun varietals such as Prosecco in Rosé style, Vermentino, and Sangiovese.
The winery integrates old world methods like open fermentation and hand and feet plunging with new techniques such as the use of heritage yeasts and organic fining agents. This approach aims to respect and showcase the true qualities of the fruit and the terroir, creating expressive and innovative wines that reflect both the heritage and future of winemaking.
Visitors can enjoy small batch, single vineyard wines and beer on tap, with the option to tour the working winery or relax in various settings, including a picturesque outdoor area or amidst the barrels in the barrel room. The cellar door provides a special chocolate tasting experience that pairs six handmade chocolates with selected wines, enhancing the tasting journey with a delightful sensory match.

Open daily from 10am to 6pm, the cellar door welcomes guests to explore its diverse offerings. Bookings are recommended on Saturdays and available but not required on weekdays and Sundays, ensuring that visitors can plan their visit conveniently. With tastings starting at $10 for signature wines and other experiences like a beer paddle and wine and chocolate pairings available, Hunter Wine Lab offers an engaging and accessible way to explore innovative winemaking.
